Ilog is a second class municipality in the province of Negros Occidental, Philippines. According to the 2010 census, it has a population of 54,423 people. Founded by the Augustinian Fathers Geronimo Marin and Francisco Bustos on May 16, 1584, it was the first capital of Negros and Siquijor Provinces in the late 18th century. The name Ilog (or Ylog, Tagalog for "river") was recommended by a Tagalog guide of the Spaniards because the place was entirely surrounded by the longest river on the whole Negros Island, the Ilog Hilabangan River. The first inhabitants of Ilog are mostly migrants from Panay province. Ilog is politically subdivided into 15 barangays. ("mananggiti or for plural manananggot"-bisaya term) before when he was stronger but he is old now not strong enough making on this. If you drink too much tuba you will get drunk because i remember my father sometimes he got drunk before.His day is not complete without this tuba.Making tuba is a good job. It is his job to earn money but not really much or it depends if you have a lot of coconut trees but it' so tiring if it's a lot.

Here is the process of making tuba.we cannot have tuba without getting from its source. As i mentioned above,it's obviously fro

m the coconut.The coconut gatherer extracts the tuba from the unopened and young coconut bud that flowers into the fruit before it reaches its state of maturity. So what tuba gatherer do is slicing the buds with the use of" curve machete "( locally called saad)and try to figure out if the buds produce a juice or a nectar on them.After slicing the buds they put a container-made up of bamboo and tie -attached to the buds to fill it out .Tuba gatherer leaves for a day then come back and try to find out if the buds can produce.So if he find out that the coconut bud is good in producing, he can now make tuba on it.What my brother do is he puts a bark of mangrove species "tungog" or Rhizophora on the bamboo container .Sometimes he buys powder but usually he buys the bark one because it tastes better. What he did is buy the bark one and cut into finely- chopped with the use of machete or called "sundang".Tuba gatherers usually wake up very early like 4 or 5 in the morning . What they do in the morning is get the tuba that produced at night then slice a little bit on the bud then put some tungog on the bamboo container.after that they leave for a day then come back in late afternoon.they come back and just slice a little bit on buds because the buds will stop producing if they do not slice it. .so they will climb the coconut trees twice a day.If you are first timer in making tuba sometimes it tastes like vinegar but you will know better if you are patience to do it.

What tuba gatherers usually do is they wait for couple days to sell to the market for better taste and it colored red brown.My brother usually do is he waits one week then ready for the market. Last year, 6 gallons worth like 250 pesos or so...If the tuba gets really old it tastes best so people called it bahal or bahalina- local term.It is also best to mix with coke.
